2. Cook the turkey bacon in a sauté pan using medium-high heat. Spray a 9×9 high-sided baking dish with a light coating of vegetable spray or olive oil.
3. Add your chopped onions and peppers to the pan and then sauté them until they are no longer firm. Next you should add the washed spinach to the pan (1-2 handfuls at a time) and cook until wilted.
4. Transfer the bacon, onions, peppers and spinach to the 9×9 baking dish. Coarsely chop the cooked turkey bacon before you add it to the baking dish.
5. Separate egg yolks from the egg whites, and put the egg whites into a mixing bowl.
6. Season the egg whites with some salt, pepper and Herbs de Provence.
7. Beat the egg whites until they are well mixed, and pour this mixture into the baking dish.
